What was on the menu at Nature's Nourishment this year?

I am so glad you asked! The menu included a line-up of amazingly fresh, local ingredients, creatively crafted into 5 gourmet courses, plus appetizers. Of course, vegetarian versions were available by request (not shown here).

Hors D’Oeuvres 

  • Braised beef bread pudding, sour cherry gel

  • Beet and goat cheese profiteroles
  • Arugula salsa verde
  • Vegetable antipasto crostini

Dinner

Edible Farm – garden greens, fennel vinaigrette, pickled vegetables, raw vegetables, roasted vegetables, country style terrine. Paired with: From the Garden Libation

Kale & Onion - crab apple confit, duck leg, hollandaise. Paired with: Martin's Lane Riesling 2012, Okanagan Valley, BC. 

Corn Succotash – corn, fava beans, peppers, onion, bacon apple-fennel pork sausage, cayenne gremolata. Paired with: Mission Hill 5 Vineyards Chardonnay 2013, Okanagan Valley, BC.

Bison Flat Iron – confit banana potato, roasted root vegetables, smoked carrot puree, peas, tarragon jus. Paired with: Mission Hill Reserve Merlot 2012, Okanagan Valley, BC.

Dessert

Baked Apple Gallette – Saskatoon-rye crumble, blackcurrant spoom. Paired with Mission Hill Reserve Riesling Ice Wine 2013.
